Picanha, also known as sirloin cap, has a outer fat cap that flavors the beef and keeps it juicy. Popular in Brazil it can be grilled, smoked, cooked in a cast iron skillet or the Brazilian way on a skewer. Picanha will get tough and chewy if over cooked so keep it medium rare for the best taste and texture.
