Marrow, sometimes referred to as "meat butter" is delicious when roasted at a high temperature in the oven or on the grill for an added smoky flavor. Scoop out the "meat butter" and spread on crostini for an extra special treat. They also provide great flavor for soup when roasted and then slowly simmered. Our marrow bones are cut cross cut into medallions but we also have canoe cut available for easier access to the marrow. Knuckle bones or stock bones are great for roasting and then slow simmering for a flavorful and gelatin rich soup or bone broth.
